Raspberry chocolate

Yet again we are talking about chocolate, this time the raspberry kind. Light, delicate, pink and yummy - an ideal choice for glitzy Christmas parties. 


For 3 mini chocolate​s:

1 cup cashew butter
1 cup melted coconut butter
1/2 cup liquid sweetener
1 spoonful freeze-dried raspberries ground into powder (to use as coloring)



Raspberry chocolate


  1. Place all ingredients in a metal pot. Using a whisk, give the ingredients a good stir over the boiling water bath until mixture is completely homogenous.
  2. When all ingredients have liquefied and the mixture is homogenous, remove it from the stove and set it aside to cool down, giving it an occasional stir so that a crust doesn't form on the surface.
  3. When the mixture has cooled down sufficiently, pour into the cups (even a silicone ice cube tray will do ) or pur over baking paper.
  4. Decorate depending on preference, using coconut chips, the lyophilized raspberries powder, pink leaves, blueberries, etc.
