Pink delights with beetroot and coconut

Beetroot rocks! Pink rules! Beetroot, coconut, and dark chocolate have become my favorite match for this season. Let's celebrate!

Ingredients

1 cup coconut
3 Tbsp coconut butter, melted
¼ cup coconut blossom syrup, or use maple
1 Tsp beetroot powder (or 1 Tbsp fresh beetroot)

20-30g raw vegan chocolate, for decoration

Steps

  • Mix all ingredients for the base in a food processor/ blender.
  • For easier shaping, cool the mixture about 10 min.
  • Form small balls.
  • Melt the chocolate gently in a water bath. 
  • Drizzle on top of each ball. 
  • Keep in a cool place.
