Coconut pudding with raspberries

My favorite breakfast! Light, creamy and delicate coconut pudding. It's dairy-free and ready in minutes! I hope you freeze raspberries like I do. Enjoy!

Ingredients

(2 servings)

1 cup fresh coconut meat of 1 young coconut (or 1 can coconut milk, but use the thick part only)
2 Tbsp cashew butter
2 Tbsp Maple syrup
frozen raspberries
a pinch of Bourbon vanilla

decoration:
pistachios
walnuts or other nuts

Coconut pudding with raspberries

Steps

  • Add coconut meat, cashew tahini, and maple syrup and blend until very smooth and creamy.
  • Serve in small cups.
  • Decorate generously with more raspberries, pistachios and walnuts.
  • Adjust sweetness to taste, if necessary.
  • Chill before serving.
